Spicy Fruit Salad
This lively Mexican fruit salad brings together sweet pineapple, mango, watermelon and crisp apple. The fruits are coated in a smooth, spicy dressing made from blended lime juice, honey and fresh jalapeño. A final sprinkle of chilli-lime seasoning adds a tangy kick. The salad needs to chill for 1 to 2 hours before serving, making it an ideal make-ahead dish for picnics or summer gatherings. It yields approximately 6 cups.
Ingredients
- 1 (8 ounce) can pineapple chunks, drained
- 1 cup cubed, seeded watermelon
- 1 mango, peeled and cubed
- 1 green apple, cored and sliced
- 0.25 cup lime juice
- 2 tablespoons honey, or more to taste
- 1 jalapeno pepper, seeded and chopped
- 2 teaspoons chili-lime seasoning (such as Tajin®)
Method
- Place the pineapple chunks, cubed watermelon, cubed mango and sliced green apple into a large mixing bowl.
- Put the lime juice, honey and chopped jalapeño pepper into a blender and process until the mixture is completely smooth.
- Pour the blended jalapeño dressing over the prepared fruit and toss everything together well. Finish by sprinkling the chilli-lime seasoning over the top. Place the salad in the refrigerator to chill thoroughly before serving, for 1 to 2 hours.
