Spicy Fried Noodles

This colourful supper dish is quick to assemble and makes a complete meal in one pan. Dried rice noodles are softened and stir fried with sliced chicken breast, garlic, spring onions and snow peas. Lightly scrambled eggs are folded through before seasoning with lime juice and fish sauce. It is finished with sliced red chilli, chopped cashews and fresh coriander for a bright presentation.

Spicy Fried Noodles

Ingredients

  • 250 g dried rice noodles
  • 2 tablespoons oil
  • 3 cloves garlic, crushed
  • 1 large skinless chicken breast, sliced
  • 3 spring onions, sliced
  • 150 g snow peas or 150 g mange-touts peas, halved
  • 2 eggs, lightly beaten
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 sliced red chile
  • 2 tablespoons chopped cashews
  • 4 tablespoons chopped fresh coriander, to garnish

Method

  1. Place the dried rice noodles in a bowl and cover them with boiling water, allowing them to soften for 3-4 minutes.
  2. Drain the noodles completely.
  3. Warm the oil in a large pan, then stir fry the crushed garlic and sliced chicken breast for two minutes until the chicken is almost cooked through.
  4. Introduce the sliced spring onions and halved snow peas to the pan, cooking them for another 30 seconds.
  5. Add the drained rice noodles to the pan and stir fry the mixture for a minute.
  6. Create a space in the middle of the pan and pour in the lightly beaten eggs.
  7. Gently scramble the eggs for 20 seconds until they are nearly set, then combine them with the noodles.
  8. Stir in the lime juice and fish sauce, mixing everything thoroughly.
  9. Remove the pan from the heat and divide the contents between two serving bowls.
  10. Top each portion with sliced red chilli, chopped cashews and a garnish of fresh coriander.
