This recipe creates a wonderfully spicy fried fish, ideal for a quick lunch or snack. Any firm-fleshed fish suitable for frying works well, with sea-water varieties being particularly good. Coated in a vibrant blend of turmeric, black pepper and curry powder, the fish is fried until crisp and golden. The whole process takes just minutes, making it an excellent choice for novice cooks. It is traditionally served with rice for a complete meal.

Spicy Fried Fish

Ingredients

  • 6 pieces flounder (avoid de-boning, washed, drained)
  • 1 cup cooking oil
  • 2 tablespoons turmeric powder
  • 2 tablespoons black-pepper seasoning
  • 1 tablespoon fish curry powder
  • 1/2 teaspoon salt (adjust according to taste)

Method

  1. Put the fish pieces into a deep dish or casserole.
  2. Mix all the spice ingredients with the fish. Should the mixture seem too dry, incorporate 2 to 3 tablespoons of filtered water.
  3. Warm a pan or wok and add the cooking oil, heating it until very hot.
  4. Fry the fish in batches, placing 2 pieces in at a time. For smaller fish, you might fit 3 pieces.
  5. Cook until the underside is golden brown, then flip to colour the other side equally.
  6. Remove the cooked fish from the pan and transfer to a plate for serving.
  7. This dish pairs wonderfully with plain rice.
