Spicy Fried Chili Peanuts

These crunchy peanuts are fried with garlic and tossed in a blend of chilli powder and cayenne pepper for a spicy kick. They make an excellent snack for sharing or a simple appetiser. For a milder result, simply reduce the amount of chilli powder. While you can prepare them in advance, they are at their best when enjoyed within 12 hours of cooking.

Spicy Fried Chili Peanuts

Ingredients

  • 1/4 cup peanut oil
  • 3 garlic cloves, thinly sliced
  • 1 lb unsalted peanuts, roasted
  • 4 tablespoons dried ancho chile powder (or any chili powder)
  • 1/2 teaspoon cayenne pepper
  • 2 -3 teaspoons salt

Method

  1. Warm the peanut oil in a large skillet on a very low heat. Place the thinly sliced garlic in the oil and cook, stirring now and then, for 15-20 minutes until it becomes crisp and brown. Be careful not to let it burn. Take the garlic out and discard it.
  2. Put the roasted peanuts into the skillet. Turn the heat up to medium high and shake the pan until the oil is taken up by the peanuts and you can smell them strongly, which should take about 5 minutes. Then take the pan off the heat.
  3. Mix the dried ancho chile powder and cayenne pepper into the warm peanuts. Finish by seasoning the mixture with 2 -3 teaspoons of salt.
