Spicy Fried Chicken Wings With Mango Chutney
These crispy chicken wings are coated in a seasoned flour and baked until golden. They are accompanied by a sweet and tangy mango chutney, cooked with shallot, vinegar and spices. This dish is ideal for casual entertaining or game day, offering a great combination of spicy and fruity flavours. The chutney also makes a delicious addition to sandwiches.
Ingredients
- 12 large chicken wings
- 4 tablespoons plain white flour
- 3 teaspoons cajun seasoning
- 2 teaspoons smoked paprika
- 1 teaspoon table salt
- 1 large mango
- 1 shallot, finely chopped
- 3 tablespoons red wine vinegar
- 3 tablespoons light brown sugar
- 1/4 teaspoon salt
- 1/2 teaspoon black mustard seeds
- 1 star anise
Method
- Heat your oven to 200C/400F/Gas Mark 6. Take a sturdy pair of scissors and cut the tip from every chicken wing.
- Combine the plain flour, Cajun seasoning, smoked paprika and table salt in a big bowl. Coat the wings in this flour mixture, then place them on a wire rack set over a baking tray. Roast for 25 - 30 minutes until they are crisp and golden.
- For the chutney, secure the mango on a chopping board. Cut down each side of the stone to get the two cheeks. Use a spoon to scoop the flesh from the skin, then roughly chop it. Also cut away any remaining fruit from the stone.
- Put the mango pieces into a saucepan with the chopped shallot, red wine vinegar, light brown sugar, 1/4 teaspoon salt, mustard seeds and star anise. Let this cook for 15 minutes until the liquid has mostly reduced. Transfer to a bowl and serve alongside the hot wings.
