Spicy Fried Chicken (Ayam Goreng Pedas)
This aromatic chicken dish, shared by a Malay friend, features thighs marinated in a blend of garlic, ginger, and warm spices. The chicken is fried until browned, then simmered with finely chopped cashews, green chillies, cauliflower, and peas. It is finished with fresh tomatoes and halved hard-boiled eggs just before serving. The total preparation and cooking time is 40 minutes, not including the required marinating period, and it serves four people.
Ingredients
- 2 cloves crushed garlic
- 1 tablespoon grated fresh ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon cracked black pepper
- 8 chicken thighs, cutlets (about 1 kg)
- oil (for frying)
- 1 cup unroasted cashews
- 3 small green chilies, chopped
- 1/2 cup water
- 500 g cauliflower, chopped
- 60 g thawed frozen peas
- 2 medium tomatoes, chopped
- 2 hard-boiled eggs, halved
Method
- Mix the first five listed ingredients in a bowl and massage this paste all over the chicken pieces, then cover and chill for a minimum of 1 hour.
- Warm oil in a heavy pan and fry the chicken in two separate batches, turning now and then, until it is deeply browned on all sides, then transfer to drain on kitchen paper.
- Finely chop the cashews using a blender or food processor.
- Place the chicken back into the pan and stir in the processed nuts and chopped green chillies, cooking while stirring for approximately 1 minute.
- Pour in the water and add the chopped cauliflower, then cover the pan and let it simmer for about 15 mins or until the chicken is tender.
- Stir in the peas and chopped tomatoes, cooking gently until the peas have just softened.
- Arrange the halved hard-boiled eggs on top of the dish right before you serve it.
