This is a distinctive Indian-inspired breakfast dish, also known as Bombay Toast. It features bread soaked in a spiced egg mixture with turmeric and green chilli, then pan-fried until golden. Spicy French Toast (Bombay Toast)

Ingredients

  • 2 slices bread (doesn't have to be white)
  • 1 eggs or 2 egg whites
  • 2 tablespoons milk
  • 1 pinch salt
  • 1/2 teaspoon very finely minced green chili pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon oil (for cooking)
  • 1/2 a small onion, sliced (1/3 cup)
  • 1 pinch turmeric
  • salt and black pepper
  • 1 garlic clove, crushed with knife blade
  • more green chili peppers (optional) or chili powder, if desired (optional)
  • 1/2 teaspoon oil

Method

  1. Place a sauté pan on the stove with 1/2 teaspoon of oil.
  2. In a large shallow bowl, combine the milk, salt, finely minced green chilli, egg or egg whites, and 1/2 teaspoon of turmeric with a whisk.
  3. Submerge both slices of bread in the egg mixture, flipping them to coat evenly. Allow them to rest in the bowl to absorb the liquid.
  4. Carefully place the soaked bread into the heated pan. Wash the bowl and your hands, then retrieve a turner.
  5. Cook until the bread becomes fragrant and turns a golden brown colour, then flip to cook the other side.
  6. If using the optional topping, transfer the cooked toast to a plate and add the remaining 1/2 teaspoon of oil to the pan.
  7. Introduce the crushed garlic clove, any extra chilli, a pinch of turmeric, and the sliced onions or other vegetables to the pan.
  8. Cook the vegetables, stirring occasionally, until the onion softens and turns translucent without browning.
  9. Switch off the heat and spoon the hot onion mixture over the prepared Bombay toast.
  10. Serve this wholesome and filling breakfast, perhaps with some fresh fruit on the side.
