Spicy Fish With Tamarind Sauce
This dish features salmon pieces simmered in a tangy and aromatic sauce. The base is created by grinding mustard seeds with dried chillies, then combining with a tamarind liquid. Onions, garlic, and ginger are sautéed before adding curry powder and the spice mix. The fish is then cooked in this flavourful sauce until tender. Ingredients
- 1 teaspoon mustard seeds (black or yellow)
- 2 dried red chilies
- 2 tablespoons tamarind paste
- 1/2 cup warm water
- 1 tablespoon olive oil
- 2 onions, sliced
- 2 garlic cloves, minced
- 2 teaspoons grated ginger
- 2 teaspoons curry powder
- salt
- 1 lb salmon fillet, cut into 4 pieces
Method
- Use a spice grinder to process the mustard seeds and dried red chillies, then set this mixture aside.
- In a small bowl, mix the tamarind paste with the warm water, mashing to form a brown liquid. Pass this through a sieve, discarding any solids and keeping the strained liquid.
- Warm the olive oil in a large skillet. Cook the sliced onions and minced garlic for 5 minutes. Stir in the grated ginger and cook for another 2 minutes.
- Add the curry powder and the ground mustard-chilli mixture to the skillet, cooking for 1 minute.
- Pour in the tamarind water and add a dash of salt. Place the salmon pieces into the skillet.
- Allow everything to simmer for about 10 minutes, or until the fish is fully cooked through.
