Spicy Fish With Tamarind Sauce

Ingredients

  • 1 teaspoon mustard seeds (black or yellow)
  • 2 dried red chilies
  • 2 tablespoons tamarind paste
  • 1/2 cup warm water
  • 1 tablespoon olive oil
  • 2 onions, sliced
  • 2 garlic cloves, minced
  • 2 teaspoons grated ginger
  • 2 teaspoons curry powder
  • salt
  • 1 lb salmon fillet, cut into 4 pieces

Method

  1. Use a spice grinder to process the mustard seeds and dried red chillies, then set this mixture aside.
  2. In a small bowl, mix the tamarind paste with the warm water, mashing to form a brown liquid. Pass this through a sieve, discarding any solids and keeping the strained liquid.
  3. Warm the olive oil in a large skillet. Cook the sliced onions and minced garlic for 5 minutes. Stir in the grated ginger and cook for another 2 minutes.
  4. Add the curry powder and the ground mustard-chilli mixture to the skillet, cooking for 1 minute.
  5. Pour in the tamarind water and add a dash of salt. Place the salmon pieces into the skillet.
  6. Allow everything to simmer for about 10 minutes, or until the fish is fully cooked through.
