Spicy Feta Stir-Fry
This vibrant stir-fry for two combines crisp snow peas, sugar snap peas, and bok choy in a savoury, spicy curry sauce. Crumbled feta cheese is stirred through at the end, adding a creamy, salty contrast to the crunchy vegetables. Ready in just over 30 minutes, it's a flavourful and colourful dinner option.
Ingredients
- 3 tablespoons vegetable oil
- 0.5 large onion, diced
- 2.5 cups trimmed and halved snow peas
- 1 cup sugar snap peas, trimmed
- 1 cup chopped bok choy
- 1.5 pinches curry powder
- 0.75 cup crumbled feta cheese
Method
- Warm the vegetable oil in a skillet. Cook the diced onion for about 1 minute until it begins to soften. Introduce the snow peas, sugar snap peas, and bok choy, stir-frying them for about 8 minutes until their colour brightens. Mix in the curry powder and continue cooking, stirring now and then, for 8 to 10 minutes to meld the flavours. Fold through the crumbled feta cheese.
- Gather the vegetable mixture into a mound in the middle of the skillet and allow it to cook for 3 minutes. Use your spatula to press the mound down and cook it for a further 3 to 5 minutes.
