Spicy Feta Dip
Tyrokafteri is a classic Greek appetiser known for its creamy texture and spicy flavour. This version combines crumbled feta with a smooth purée of roasted red peppers, pepperoncini and cayenne pepper. Ricotta cheese and a touch of lemon juice are blended in to create a uniform, colourful dip. After mixing, it requires chilling for at least 2 hours to allow the flavours to meld beautifully before serving.
Ingredients
- 1 cup crumbled feta cheese
- 0.5 cup chopped roasted red peppers
- 4 pepperoncini peppers, drained and stemmed
- 1 teaspoon cayenne pepper, or more to taste
- 1 cup ricotta cheese
- 1 teaspoon lemon juice
Method
- Place the feta cheese in a food processor and pulse it briefly to achieve small, even crumbles, then move it to a mixing bowl.
- In the same processor, blend the roasted red peppers, pepperoncini and cayenne pepper into a smooth purée, then combine this with the feta.
- Stir the ricotta cheese and lemon juice into the feta and pepper mixture until the texture and colour are consistent. Place the dip in a sealed container and chill it for at least 2 hours or overnight prior to serving.
