Spicy Fennel Prawns
This American main course features colossal prawns with a vibrant seasoning of toasted fennel seed, chilli flakes, and fresh lemon. The prawns are quickly pan-cooked until firm and pink, then finished with a bright splash of lemon juice. It's a fast, flavourful dish that comes together in only 5 minutes, making it perfect for an impressive yet simple meal for 12 people.
Ingredients
- 24 colossal prawns, tails on, deveined
- 2 tsps fennel seed
- 1 tsp chilli flakes
- Salt and freshly ground black pepper
- 2 lemons, zested, juiced
- 4 cloves garlic, grated
- 4 tbsps extra-virgin olive oil
Method
- Put the prawns into a bowl. Season them with the fennel seed, chilli flakes, a generous amount of salt and pepper, and the zest from two lemons. Add the grated garlic and olive oil, then use your hands to mix everything until the prawns are fully coated.
- Get a frying pan hot and cook the prawns until they turn pink and become firm. Pour the juice from two lemons into the pan, then serve the prawns straight away.
