Spicy Elizabethan Pork Casserole
This Elizabethan-inspired pork casserole is a robust and aromatic stew. Pork is coated in a spiced flour, browned, and then slow-cooked with red wine, honey, dates, and potato. Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 2 garlic cloves, crushed
- 1 1/2 lbs pork legs, boned, cubed
- 2 tablespoons flour
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/2 teaspoon cumin
- salt & freshly ground black pepper
- 1 1/4 cups red wine
- 1 tablespoon honey
- 2 1/4 ounces pitted dates, roughly chopped
- 1 large potato, peeled and cut into chunks
- 2 tablespoons fresh herbs, chopped to serve
Method
- Set your oven to 400°F. Warm the oil in a pan and cook the sliced onion and crushed garlic for 10 minutes.
- Coat the cubed pork by tossing it in the flour mixed with the nutmeg, ginger, cumin, salt, and pepper. Add this to the pan with the onions.
- Cook the meat, giving it an occasional stir, until it browns on all sides. Pour in the red wine and honey, then stir continuously for another minute.
- Mix in the chopped dates and potato chunks. Move everything into a casserole dish suitable for the oven.
- Put the lid on the dish and cook for 2-2½ hours, until the pork is completely tender. Stir through the chopped fresh herbs right before you serve.
