Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 2 garlic cloves, crushed
  • 1 1/2 lbs pork legs, boned, cubed
  • 2 tablespoons flour
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cumin
  • salt & freshly ground black pepper
  • 1 1/4 cups red wine
  • 1 tablespoon honey
  • 2 1/4 ounces pitted dates, roughly chopped
  • 1 large potato, peeled and cut into chunks
  • 2 tablespoons fresh herbs, chopped to serve

Method

  1. Set your oven to 400°F. Warm the oil in a pan and cook the sliced onion and crushed garlic for 10 minutes.
  2. Coat the cubed pork by tossing it in the flour mixed with the nutmeg, ginger, cumin, salt, and pepper. Add this to the pan with the onions.
  3. Cook the meat, giving it an occasional stir, until it browns on all sides. Pour in the red wine and honey, then stir continuously for another minute.
  4. Mix in the chopped dates and potato chunks. Move everything into a casserole dish suitable for the oven.
  5. Put the lid on the dish and cook for 2-2½ hours, until the pork is completely tender. Stir through the chopped fresh herbs right before you serve.
