Spicy Easy Baked Chicken Drumsticks
These chicken drumsticks are marinated in a simple blend of light beer, yellow mustard, chopped garlic, red pepper flakes, salt, and black pepper. After marinating for at least 2 hours, they are baked in the oven until thoroughly cooked and juicy. This straightforward recipe yields a delicious and satisfying main course for four people, requiring about 3 hours total time including marination.
Ingredients
- 0.5 cup light beer
- 0.33333334326744 cup prepared yellow mustard
- 2 cloves garlic, chopped
- 0.5 teaspoon red pepper flakes
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 2 pounds chicken drumsticks
Method
- In a 1-gallon resealable plastic bag, mix together the light beer, yellow mustard, chopped garlic, red pepper flakes, salt, and black pepper. Add the chicken drumsticks to the bag, seal it, and turn to coat the chicken evenly in the marinade, squeezing out the air.
- Place the sealed bag in the refrigerator and allow the chicken to marinate for a minimum of 2 hours, though leaving it overnight is preferable.
- Heat your oven to 425 degrees F (220 degrees C). Take the chicken and sauce from the plastic bag and transfer them into a baking dish.
- Cover the baking dish containing the drumsticks and marinade securely with a sheet of aluminum foil.
- Place the covered dish in the preheated oven and bake for 30 minutes. You may then check the chicken and remove the foil if you wish. Continue baking until the chicken is cooked through with no pink near the bone and the juices are clear, for approximately 15 more minutes. The internal temperature should reach 165 degrees F (74 degrees C) when checked with an instant-read thermometer near the bone.
