This robust dry rub is ideal for coating ribs, pork roasts, or chicken. The blend of spices, including cumin, chilli powder, and a touch of cocoa, creates a complex flavour. Spicy Dry Rub for Ribs

Ingredients

  • 2 tablespoons cumin
  • 2 tablespoons chili powder
  • 1 tablespoon coriander
  • 1 1/2 teaspoons cayenne pepper
  • 1 tablespoon pepper
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons brown sugar
  • 1 teaspoon cocoa
  • 1/2 teaspoon salt

Method

  1. Combine all the listed ingredients in a bowl.
  2. Apply the rub mixture generously onto the ribs and allow them to sit for 15 - 20 minutes.
  3. Bake the ribs in an oven preheated to 350F for 1 1/2 hours.
  4. Remove the ribs from the oven and place them inside a paper bag to rest for 15 - 20 minutes.
  5. Serve the ribs with your preferred barbecue sauce if you like.
