Spicy Dry Rub for Ribs
This robust dry rub is ideal for coating ribs, pork roasts, or chicken. The blend of spices, including cumin, chilli powder, and a touch of cocoa, creates a complex flavour. After applying the rub, the meat is baked and then rested in a paper bag to become wonderfully tender. Keep a jar of the mixture in your pantry for quick use.
Ingredients
- 2 tablespoons cumin
- 2 tablespoons chili powder
- 1 tablespoon coriander
- 1 1/2 teaspoons cayenne pepper
- 1 tablespoon pepper
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons brown sugar
- 1 teaspoon cocoa
- 1/2 teaspoon salt
Method
- Combine all the listed ingredients in a bowl.
- Apply the rub mixture generously onto the ribs and allow them to sit for 15 - 20 minutes.
- Bake the ribs in an oven preheated to 350F for 1 1/2 hours.
- Remove the ribs from the oven and place them inside a paper bag to rest for 15 - 20 minutes.
- Serve the ribs with your preferred barbecue sauce if you like.
