Spicy Dry Rub Elk Tacos

Ingredients
- 2 elk steaks
- 1 onion
- 1 tomatoes
- 1 avocado
- 1 lime
- 1 yellow sweet bell pepper
- 1 red sweet bell pepper
- 6 corn tortillas
- 1 cup cabbage
- 1/2 cup sour cream
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon ground chipotle chile pepper
- 1 tablespoon ground cumin
Method
- Combine all the listed spices in a small bowl to create the dry rub.
- Place the elk steaks on a board and coat them thoroughly on both sides with the spice mixture. For best results, allow the seasoned meat to rest at room temperature for 30 minutes.
- Prepare your chosen taco toppings by dicing the onion, bell peppers, tomato, and avocado.
- Once your toppings are ready, warm the corn tortillas and keep them in a 250 degree oven.
