Spicy Dry Rub Elk Tacos

Ingredients

  • 2 elk steaks
  • 1 onion
  • 1 tomatoes
  • 1 avocado
  • 1 lime
  • 1 yellow sweet bell pepper
  • 1 red sweet bell pepper
  • 6 corn tortillas
  • 1 cup cabbage
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground chipotle chile pepper
  • 1 tablespoon ground cumin

Method

  1. Combine all the listed spices in a small bowl to create the dry rub.
  2. Place the elk steaks on a board and coat them thoroughly on both sides with the spice mixture. For best results, allow the seasoned meat to rest at room temperature for 30 minutes.
  3. Prepare your chosen taco toppings by dicing the onion, bell peppers, tomato, and avocado.
  4. Once your toppings are ready, warm the corn tortillas and keep them in a 250 degree oven.
  5. Heat a cast iron grill until it is very hot before adding the meat.
  6. Cook the elk steaks for 3-4 minutes, then turn them diagonally to cook for another 3-4 minutes to create grill marks.
  7. Flip the steaks over and repeat the cooking process on the other side.
  8. Take the meat off the grill and let it rest briefly before slicing it into 1/4 inch pieces, cutting across the grain.
