Spicy Drumsticks With Pasta

Ingredients

  • 8 medium chicken drumsticks
  • 1 medium onion
  • nonstick cooking spray
  • 6 ounces vegetable juice, spicy hot (3/4c.)
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 0.75 (8 ounce) package bow tie pasta
  • parsley sprig, for garnish

Method

  1. Take the skin off the drumsticks and chop the onion. Use cooking spray to coat a 10-inch skillet. Cook the drumsticks and onion in the skillet until the onion turns golden and the chicken browns, turning the drumsticks now and then.
  2. Combine the cornstarch with half a cup of water in a cup. Add this mixture along with the vegetable juice and salt to the skillet. Bring everything to a boil, then lower the heat. Cover the pan and let it simmer for 20 minutes, or until the chicken juices are clear when pierced, turning the drumsticks occasionally.
