Spicy Drumsticks With Pasta
This Italian-inspired recipe features skinless chicken drumsticks browned with onion, then simmered in a sauce made from spicy vegetable juice. The dish is served alongside cooked bow tie pasta, creating a complete meal. Ingredients
- 8 medium chicken drumsticks
- 1 medium onion
- nonstick cooking spray
- 6 ounces vegetable juice, spicy hot (3/4c.)
- 1 teaspoon cornstarch
- 1/2 teaspoon salt
- 0.75 (8 ounce) package bow tie pasta
- parsley sprig, for garnish
Method
- Take the skin off the drumsticks and chop the onion. Use cooking spray to coat a 10-inch skillet. Cook the drumsticks and onion in the skillet until the onion turns golden and the chicken browns, turning the drumsticks now and then.
- Combine the cornstarch with half a cup of water in a cup. Add this mixture along with the vegetable juice and salt to the skillet. Bring everything to a boil, then lower the heat. Cover the pan and let it simmer for 20 minutes, or until the chicken juices are clear when pierced, turning the drumsticks occasionally.
- While the chicken cooks, prepare the bow tie pasta according to the package instructions. Drain the pasta and keep it warm.
- For serving, place the cooked drumsticks and sauce onto a warm platter. Serve the bow tie pasta alongside the chicken. Add a sprig of parsley as a garnish.
