Spicy Dove Lettuce Wraps
This recipe offers a different way to enjoy dove, moving beyond the classic bacon-wrapped preparation. Dove breasts are pounded, marinated, and then quickly seared before being served with a selection of fresh vegetables and warm rice. Guests can assemble their own wraps using crisp lettuce leaves, customising each bite before dipping it into a tangy and spicy sauce. It's an impressive dish perfect for sharing with friends or family.
Ingredients
- 12 -15 doves, skin removed breasts removed from carcasses
- 1 -2 tablespoon canola oil or 1 -2 tablespoon peanut oil
- 2 tablespoons light soy sauce
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 teaspoons fresh gingerroot, peeled and minced
- 2 tablespoons Asian chili sauce (or substitute a few splashes of your favorite hot sauce)
- 3/4 cup light soy sauce
- 1/4 cup rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon fresh gingerroot, peeled and minced
- prepared stuffing
- 1 cup warm cooked brown rice
- 1 cup carrot, shredded
- 1 cup green onion, thinly sliced
- 1 cup red bell pepper, thinly sliced into strips
- 16 large iceberg lettuce or 16 large romaine lettuce leaves
Method
- Lightly pound the dove breasts with a mallet until they are half their original thickness.
- Mix the marinade ingredients together and toss them with the pounded dove breasts.
- Cover the bowl and place it in the refrigerator for at least 1 hour and up to 12 hours.
- Combine all the dipping sauce ingredients and separate the mixture into four small bowls.
- Arrange the prepared stuffing ingredients on a serving platter.
- Take the dove breasts out of the marinade and discard the leftover marinade.
- Heat 1 – 2 tablespoons of oil in a large skillet or wok.
- Cook the dove breasts for about 1 minute on each side, just until they are lightly browned.
- Remove the cooked breasts from the heat and transfer them to the serving platter.
- To serve, let your guests fill a lettuce leaf with their chosen ingredients.
- Roll the filled leaf up by hand to form a wrap.
- Hold the wrap firmly and dip it into the individual bowls of sauce.
