Spicy Doritos Chicken
This American dinner or snack idea transforms chicken breasts with a crunchy coating made from spicy nacho cheese tortilla chips and whole wheat breadcrumbs. The chicken is first dipped in a cayenne-spiked egg wash before being pressed into the crumb mixture and baked. It results in a juicy, well-seasoned main with a bold, crispy exterior, perfect for a straightforward weeknight meal that serves two.
Ingredients
- 1 egg
- 1 tablespoon water
- 1 teaspoon cayenne pepper
- 0.75 cup crushed spicy nacho cheese-flavored tortilla chips (such as Doritos® Spicy)
- 0.33333334326744 cup whole wheat bread crumbs
- ground black pepper to taste
- 2 skinless, boneless chicken breasts
Method
- Set your oven to heat to 350 degrees F (175 degrees C). Position a wire rack suitable for the oven over a baking tray.
- In a shallow dish, combine the egg, water, and cayenne pepper with a whisk. In another dish, stir together the crushed spicy nacho cheese chips, whole wheat bread crumbs, and black pepper. Coat each chicken breast fully in the egg mixture, then press it into the chip mixture to cover both sides. Transfer the coated chicken onto the prepared wire rack.
- Place in the heated oven and bake for about 25 minutes, until the chicken is cooked through with clear juices and is no longer pink inside. The internal temperature should reach at least 165 degrees F (74 degrees C) when checked with a thermometer.
