Spicy Dirty Rice
This hearty one dish meal combines ground beef and rice for a satisfying dinner. The dish gets its character from canned Rotel tomatoes and an optional pinch of cayenne pepper for heat. It simmers together before being finished with a sprinkle of Parmesan cheese if you like. The entire process takes about 35 minutes to complete and yields enough for five servings.
Ingredients
- 1 lb ground beef
- 1 1/2 cups rice
- 3 cups water
- 2 (10 ounce) cans rotel
- 1/4 teaspoon cayenne pepper (optional)
- grated parmesan cheese (optional)
Method
- Brown the ground beef in a large skillet, then drain off any excess fat.
- Prepare the rice by boiling the 3 cups of water, adding the 1 1/2 cups of rice, covering the pan, and letting it simmer for 20 minutes.
- Stir the canned Rotel and the optional 1/4 teaspoon of cayenne pepper into the cooked rice and beef mixture.
- Allow everything to simmer together for an additional 5-10 minutes.
- Dish it up and add a topping of grated Parmesan cheese according to your preference.
