Spicy Diced Vegetables

This delicious vegetarian recipe features diced potatoes, carrots, tomatoes and green beans. They are cooked in a pan with mustard seeds, onion, garlic and ginger, then coated in a blend of turmeric, cumin, chilli powder and garam masala. The vegetables are simmered with a little water until tender. It makes a satisfying meal for four when served with rice or your preferred bread.

Spicy Diced Vegetables

Ingredients

  • 2 carrots
  • 2 potatoes, Large
  • 2 tomatoes
  • 250 g green beans
  • 2 tablespoons vegetable oil
  • 2 teaspoons black mustard seeds
  • 2 onions, finely chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon fresh ginger, finely chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon garam masala
  • salt

Method

  1. Dice the peeled carrots, potatoes and tomatoes.
  2. Trim the green beans and cut them into small pieces.
  3. Warm the vegetable oil in a heavy saucepan and fry the black mustard seeds until they begin to pop. Add the finely chopped onion, chopped garlic and finely chopped ginger, frying and stirring often until the onion turns golden.
  4. Mix in the turmeric powder, ground cumin and chilli powder, frying them for a few seconds. Add all the prepared vegetables and toss them to coat evenly in the spices and oil.
  5. Season the mixture with salt according to your taste.
  6. Pour in 3 tablespoons of water, place a lid on the pan and cook for 15 minutes, or until the vegetables have softened.
  7. Gently stir the vegetables every 5 minutes during cooking, adding a little more water if the pan appears dry.
  8. Just before finishing, sprinkle the garam masala over the vegetables.
  9. Serve the spicy vegetables alongside rice or your chosen bread.
