Spicy Deep-Fried Green Tomatoes
These spicy deep-fried green tomatoes offer a crispy, golden exterior with a tangy centre. Sliced tomatoes are coated in a seasoned flour and cornmeal mix, then dipped in an egg wash before frying until perfectly crisp. They make an excellent snack or lunch dish, served hot with a cool ranch dressing for dipping. The whole process takes just 19 minutes to complete.
Ingredients
- 4 large green tomatoes (larger size)
- 1 cup flour
- 1 (8 1/2 ounce) package corn muffin mix, martha white, jiffy
- 2 eggs
- 1/4 cup milk
- 3/4 teaspoon cajun seasoning
- 1/2 teaspoon Mrs. Dash seasoning mix (extra spicy)
- salt & pepper, to taste
- oil, for deep fryer
Method
- Heat the oil for deep frying to 400 degrees.
- Wash the green tomatoes and cut them into slices that are 1/4 inch thick.
- Combine the flour, corn muffin mix, and all the seasonings in a medium bowl, then set this mixture aside.
- Whisk the eggs and milk together in a separate bowl and set this aside.
- Take each tomato slice and coat it first in the dry flour mixture, then dip it into the egg wash. Shake off any excess liquid before coating it once more in the flour mixture, shaking gently to remove loose breading.
- Deep fry the coated slices, turning them once, until they are golden brown and begin to float in the oil.
- Transfer the fried tomatoes to paper towels to drain any excess oil. Serve them accompanied by ranch dressing.
