Spicy Curry Masala Chicken Nibbles
These Indian chicken nibbles are a flavourful snack or lunch. Chicken wing pieces are coated in a spiced flour mixture and deep-fried until golden. They are then tossed in a rich, aromatic sauce made with butter, curry powder, garam masala, and fresh coriander. The result is a deliciously spicy and moreish finger food ideal for serving to friends and family. The whole process takes about 25 minutes to complete.
Ingredients
- 1/2 kg chicken wings
- 1/2 cup plain flour
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 liter oil
- 75 g butter or 75 g margarine
- 1/2 teaspoon salt
- 1 teaspoon curry powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger powder
- 1/2 cup fresh coriander, chopped
Method
- Separate the chicken wings at the joints to create bite-sized pieces.
- Wash the chicken pieces thoroughly and allow them to drain in a sieve.
- Combine the plain flour, 1/2 teaspoon of salt, chili powder, and garlic powder in a large bowl.
- Place the chicken nibbles into the bowl and use your hands to mix until they are evenly coated in the flour mixture.
- Pour 1/2 liter of oil into a wok and heat it for deep frying.
- Once the oil is hot, add a batch of chicken pieces without overcrowding the wok. Stir them every few minutes and cook for 6-8 minutes until they turn a light golden colour. Remove and set aside in a bowl.
- After all the chicken is cooked, drain the oil from the wok and wipe it clean with a paper towel.
- To make the curry sauce, place the clean wok over a medium heat and add the butter.
- When the butter has softened slightly, add the remaining 1/2 teaspoon of salt, curry powder, garam masala, garlic powder, and ginger powder. Stir well for a minute, then taste and adjust the seasoning if needed.
- Stir in the chopped fresh coriander and cook for a further minute.
- Add the cooked chicken nibbles to the sauce in the wok. Mix well over a low heat for one minute, stirring constantly until the chicken is fully coated.
- The dish is now ready to be served.
