Spicy Curry Masala Chicken Nibbles

Ingredients

  • 1/2 kg chicken wings
  • 1/2 cup plain flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 liter oil
  • 75 g butter or 75 g margarine
  • 1/2 teaspoon salt
  • 1 teaspoon curry powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/2 cup fresh coriander, chopped

Method

  1. Separate the chicken wings at the joints to create bite-sized pieces.
  2. Wash the chicken pieces thoroughly and allow them to drain in a sieve.
  3. Combine the plain flour, 1/2 teaspoon of salt, chili powder, and garlic powder in a large bowl.
  4. Place the chicken nibbles into the bowl and use your hands to mix until they are evenly coated in the flour mixture.
  5. Pour 1/2 liter of oil into a wok and heat it for deep frying.
  6. Once the oil is hot, add a batch of chicken pieces without overcrowding the wok. Stir them every few minutes and cook for 6-8 minutes until they turn a light golden colour. Remove and set aside in a bowl.
  7. After all the chicken is cooked, drain the oil from the wok and wipe it clean with a paper towel.
  8. To make the curry sauce, place the clean wok over a medium heat and add the butter.
  9. When the butter has softened slightly, add the remaining 1/2 teaspoon of salt, curry powder, garam masala, garlic powder, and ginger powder. Stir well for a minute, then taste and adjust the seasoning if needed.
  10. Stir in the chopped fresh coriander and cook for a further minute.
  11. Add the cooked chicken nibbles to the sauce in the wok. Mix well over a low heat for one minute, stirring constantly until the chicken is fully coated.
  12. The dish is now ready to be served.
