Spicy Cucumber Salad
This vibrant Thai salad is a classic condiment, often served alongside grilled satay skewers. It combines crisp cucumber with red onion and jalapeño, all tossed in a tangy dressing of fresh lime juice, soy sauce and sesame oil. The dish comes together in minutes and can be finished with a garnish of chopped peanuts for extra crunch. It yields enough for four servings.
Ingredients
- 2 English cucumbers
- 1/2 medium red onion, chopped
- 1 -2 jalapeno pepper, seeded and chopped
- 3 tablespoons fresh lime juice
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1/4 cup chopped unsalted dry roasted peanuts, for garnish (optional)
Method
- Slice each cucumber in half lengthways and scoop out the seeds.
- Cut the cucumber halves into thin slices.
- Transfer the sliced cucumber, chopped onion and chopped chillies to a mixing bowl.
- Whisk together the lime juice, soy sauce and sesame oil, then pour this mixture over the vegetables.
- Toss everything to coat thoroughly. You can chill the salad for an hour now, though it is also excellent served immediately.
- Scatter the chopped peanuts over the top before presenting.
