This vibrant Thai salad is a classic condiment, often served alongside grilled satay skewers. It combines crisp cucumber with red onion and jalapeño, all tossed in a tangy dressing of fresh lime juice, soy sauce and sesame oil. The dish comes together in minutes and can be finished with a garnish of chopped peanuts for extra crunch. It yields enough for four servings.

Spicy Cucumber Salad

Ingredients

  • 2 English cucumbers
  • 1/2 medium red onion, chopped
  • 1 -2 jalapeno pepper, seeded and chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/4 cup chopped unsalted dry roasted peanuts, for garnish (optional)

Method

  1. Slice each cucumber in half lengthways and scoop out the seeds.
  2. Cut the cucumber halves into thin slices.
  3. Transfer the sliced cucumber, chopped onion and chopped chillies to a mixing bowl.
  4. Whisk together the lime juice, soy sauce and sesame oil, then pour this mixture over the vegetables.
  5. Toss everything to coat thoroughly. You can chill the salad for an hour now, though it is also excellent served immediately.
  6. Scatter the chopped peanuts over the top before presenting.
