Spicy Crock Pot Queso
This rich and spicy cheese dip is an essential party food, easily prepared in a crock pot. It combines browned sausage with melted Velveeta cheese and Rotel tomatoes for a flavourful result. The spice level can be adjusted based on your choice of sausage and tomato variety. It serves as both a fantastic dip for tortilla chips and a versatile sauce for other dishes.
Ingredients
- 1 lb sausage (chorizo works well, too)
- 32 ounces Velveeta cheese, cut into cubes
- 2 (28 ounce) cans Rotel Tomatoes (for added spice use the "Extra Hot" flavor)
Method
- Crumble the sausage and cook it in a skillet until browned.
- Put the cubed Velveeta cheese and the cans of Rotel tomatoes into the crock pot and set it to high.
- Transfer the browned sausage from the skillet into the crock pot.
- Keep the crock pot on high, stirring now and then, until all the cheese is fully melted.
- Reduce the heat setting to low, then serve with tortilla chips.
- This mixture also makes an excellent sauce.
- For bigger gatherings, consider making a double batch as it is always popular.
