Spicy Crock Pot Chicken

Ingredients
- 2 tablespoons oil
- 3 lbs boneless skinless chicken breasts, cut into 1/2-1-inch pieces
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 small jalapeno pepper, chopped fine
- 1 (14 1/2 ounce) can Mexican-style tomatoes
- 1 (14 1/2 ounce) can hominy
- 1/4 teaspoon cumin
- 1 teaspoon oregano
Method
- Brown the chicken pieces in a skillet, then remove and drain them.
- Sauté the chopped onion, minced garlic, and fine-chopped jalapeño pepper in the same skillet until they begin to soften.
- Transfer all ingredients, except the hominy, into the slow cooker stoneware and mix well. Stir in the hominy during the final hour of cooking. Cover and cook on Low for 7 to 9 hours or on High for 3 to 4 hours.
- Serve the finished chicken with flour tortillas.
