This vibrant vegetable medley is a healthy and flavourful vegetarian side. It combines green pepper, onion, eggplant and garlic, sautéed and simmered with tomatoes, corn and hot Creole seasoning. The result is a juicy, spiced dish that's ideal for serving alongside jambalaya or other Louisiana-inspired mains. It makes 8 servings and is ready in about 45 minutes.

Spicy Creole Vegetable Medley

Ingredients

  • 1 green bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 1 medium eggplant, peeled and chopped
  • 2 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 (24 ounce) can sliced tomatoes with juice
  • 1 (15 ounce) can corn kernels, drained
  • 1 tablespoon hot creole seasoning, of choice
  • salt & freshly ground black pepper

Method

  1. Warm the olive oil in a pan and sauté the chopped green bell pepper, yellow onion, eggplant and minced garlic until softened.
  2. Pour in the canned tomatoes with their juice, add the drained corn kernels and stir in the hot Creole seasoning.
  3. Allow the mixture to simmer until some of the liquid has reduced.
  4. Let the vegetables cool slightly before tasting and adjusting the salt and freshly ground black pepper as needed.
