Spicy Creole Vegetable Medley
This vibrant vegetable medley is a healthy and flavourful vegetarian side. It combines green pepper, onion, eggplant and garlic, sautéed and simmered with tomatoes, corn and hot Creole seasoning. The result is a juicy, spiced dish that's ideal for serving alongside jambalaya or other Louisiana-inspired mains. It makes 8 servings and is ready in about 45 minutes.
Ingredients
- 1 green bell pepper, chopped
- 1 medium yellow onion, chopped
- 1 medium eggplant, peeled and chopped
- 2 garlic cloves, minced
- 3 tablespoons olive oil
- 1 (24 ounce) can sliced tomatoes with juice
- 1 (15 ounce) can corn kernels, drained
- 1 tablespoon hot creole seasoning, of choice
- salt & freshly ground black pepper
Method
- Warm the olive oil in a pan and sauté the chopped green bell pepper, yellow onion, eggplant and minced garlic until softened.
- Pour in the canned tomatoes with their juice, add the drained corn kernels and stir in the hot Creole seasoning.
- Allow the mixture to simmer until some of the liquid has reduced.
- Let the vegetables cool slightly before tasting and adjusting the salt and freshly ground black pepper as needed.
