Spicy Creamy Tomato Bacon Pasta Sauce

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 6 slices bacon, diced
  • 1/2 cup white wine
  • dried red chili pepper flakes, to taste (I used about 1/2 teaspoon)
  • 1 (700 ml) jar tomato sauce
  • 1/2 cup water
  • 1 teaspoon chicken stock powder
  • 1/2 cup cream (I used light)
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • fresh ground black pepper

Method

  1. Warm the olive oil in a heavy based frying pan.
  2. Cook the chopped onion for about 5 minutes, then add the diced bacon and crushed garlic, cooking for a further 5 minutes or until the bacon is done.
  3. Pour in the white wine and let it cook down for a couple of minutes, then stir in the chilli flakes, tomato sauce, water, and chicken stock powder.
  4. Let the sauce simmer for about 15 minutes.
  5. Stir through the cream, fresh basil, parsley, and black pepper, then reheat gently before serving over cooked pasta.
