Ingredients
- 20 ounces fresh spinach leaves
- 1 tablespoon butter
- 1 white onion, peeled and finely chopped
- 2 garlic cloves, chopped
- 2 jalapenos, stemmed and chopped (remove seeds if milder flavor is desired)
- 2 1/2 tablespoons flour
- 1 cup chicken broth or 1 cup turkey broth
- 1 cup whipping cream
- 8 ounces sharp cheddar cheese, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Method
- Rinse the spinach and discard any tough stems.
- Tear or cut any large spinach leaves into smaller pieces. (If using frozen spinach, ensure it is thawed and drained.)
- Place a sauté pan over the heat and melt the butter.
- Cook the chopped onion, garlic, and jalapeños until the onion is soft and clear, taking care not to let it colour.
- Incorporate the flour into the pan and stir thoroughly.
- Pour in the stock and bring the mixture to a boil.
- Wilt the spinach by adding it to the pan in small batches. (Add thawed frozen spinach all at once.)
- Once all the spinach is in the pan, add the cream and return everything to a boil.
- Reduce the heat so the mixture simmers gently.
- Stir in the grated cheddar cheese until it melts completely.
- Adjust the seasoning with the salt and black pepper.
- The dish can be prepared in advance and reheated when needed.
