Spicy Cranberry Sauce

This vibrant sauce combines whole berry cranberry sauce with sweet pineapple, aromatic ginger, and a kick of fresh jalapeno. It simmers quickly into a flavourful condiment that pairs wonderfully with festive turkey. Alternatively, it makes a superb spread for cream cheese as a simple appetiser. Spicy Cranberry Sauce

Ingredients

  • 2 (8 ounce) cans pineapple tidbits, drained and patted dry
  • 1 (16 ounce) can whole berry cranberry sauce
  • 0.25 cup brown sugar
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 3 green onions, chopped
  • 1 fresh jalapeno chile (or more to taste), seeded and chopped
  • 1 sprig fresh rosemary

Method

  1. Place the pineapple tidbits, cranberry sauce, brown sugar, ginger, and salt into a saucepan and bring the mixture to a boil. Lower the heat and let it simmer, stirring frequently, until the berries burst, for about 5 minutes.
  2. Take the pan off the heat and stir through the chopped green onions and jalapeno peppers. Finish by garnishing with the sprig of fresh rosemary.
