Spicy Cranberry Salsa
This zesty Mexican salsa combines fresh cranberries with chopped red onion, sliced serrano peppers, and fragrant cilantro. Flavoured with cumin, mild honey, and the bright tang of lime juice and zest, it creates a uniquely spicy and sweet condiment. The mixture is pulsed in a food processor for a coarse texture, then chilled to allow the flavours to meld beautifully. It yields approximately 2 1/2 cups and is ready after an overnight rest.
Ingredients
- 3 cups cranberries, fresh
- 1/2 cup red onion, chopped
- 2 serrano peppers, sliced
- 1/4 cup cilantro, chopped
- 1 teaspoon cumin
- 1/2 cup mild honey
- 2 tablespoons lime juice
- 1 tablespoon lime zest
Method
- Combine every listed ingredient in the bowl of a food processor.
- Pulse the machine several times to chop the contents coarsely.
- Cover the salsa and refrigerate it overnight.
