Spicy Country Ribs
This recipe uses meaty country-style pork ribs, which are cooked low and slow in a rich sauce made with ketchup, cider vinegar, brown sugar, and chipotle powder. The ribs are finished under a hot grill for a caramelised exterior, and the cooking juices are reduced into a glossy sauce. Plan for a total cooking time of about 4 hours. It serves four people and pairs wonderfully with biscuits and coleslaw.
Ingredients
- 1 small onion, finely chopped (1/2 cup)
- 1/2 cup ketchup
- 1/2 cup cider vinegar
- 1/4 cup brown sugar
- 1 tablespoon kosher salt
- 1 tablespoon Worcestershire sauce
- 1 teaspoon ground dried chipotle powder (www.penzeys.com is a good source)
- 1 teaspoon dried oregano
- 4 lbs country-style pork ribs
Method
- In a 4 to 6 quart slow cooker, mix together the finely chopped onion, ketchup, cider vinegar, brown sugar, kosher salt, Worcestershire sauce, ground dried chipotle powder, and dried oregano.
- Add the country-style pork ribs to the slow cooker and stir them into the sauce mixture.
- Place the lid on the cooker and cook on a low setting for 6 hours, or use a high setting for 3 ½ hours.
- Once cooked, use tongs to take the ribs out of the slow cooker and transfer them to a broiler pan.
- Turn on your oven's broiler function to heat it up.
- Pour the liquid from the slow cooker into a bowl and put it in the freezer for 10 minutes. this helps the fat rise to the top quickly.
- Skim off and discard the layer of fat that has solidified on top of the juices.
- Transfer the defatted cooking liquid to a saucepan and bring it to a boil over high heat. let it boil until it has reduced in volume by half, which should take about 15 minutes.
- Place the ribs under the preheated broiler, positioning them about 6 inches from the heat source, and cook until they are nicely browned.
- Arrange the grilled ribs on a serving platter and offer the reduced sauce separately.
