Spicy Corn Casserole
This creamy corn casserole offers a delicious upgrade from plain tinned corn. It combines whole kernel corn with diced green chillies in a rich, smooth sauce made from cream cheese, butter and milk. Baked until bubbly, it makes an excellent accompaniment for tacos, fajitas, and other Tex Mex favourites. You can easily prepare it using frozen, defrosted corn as well. The recipe yields six servings and takes about 40 minutes from start to finish.
Ingredients
- 2 (15 1/4 ounce) cans whole kernel corn, drained
- 1 (4 ounce) can diced green chilies
- 2 tablespoons butter or 2 tablespoons margarine
- 8 ounces cream cheese
- 1/4 cup milk
Method
- Place a medium saucepan over low heat and melt the butter, cream cheese and milk together until the mixture is smooth and creamy.
- Add the drained corn and the diced green chillies to the saucepan, stirring them into the cream cheese mixture.
- Transfer the combined mixture into a 2 quart casserole dish.
- Bake the casserole in an oven preheated to 350 degrees for 30 minutes.
