This colourful and satisfying salad is a flavourful main dish. It combines sweetcorn kernels, black beans, creamy avocado and cherry tomatoes with a crumble of feta. The whole dish is brought together with a punchy dressing made from lime, chipotle Tabasco and cumin, offering a delightful mix of textures and a spicy kick. It's a quick and exciting meal option.

Spicy Corn, Black Bean and Feta Salad

Ingredients

  • 2 sweetcorn
  • 400g can black beans drained and rinsed
  • 1 avocado cut into chunks
  • 200g cherry tomatoes halved
  • 4 spring onions roughly chopped
  • 100g feta cheese crumbled
  • lime wedges, to serve (optional)
  • 1 tsp ground cumin
  • 1 tbsp chipotle Tabasco sauce (use regular Tabasco if you can't find this)
  • juice and zest 2 limes
  • 1 tbsp sherry vinegar
  • 2 tbsp extra-virgin olive oil

Method

  1. Cook the sweetcorn in boiling salted water for 10 mins. Drain and cool it under cold water, then slice the kernels from the cob. Place the kernels into a bowl with the drained black beans, avocado chunks, halved tomatoes and chopped spring onions.
  2. Combine the cumin, chipotle Tabasco, lime zest and juice, sherry vinegar and olive oil in a separate bowl, seasoning to taste. Pour this dressing over the salad and toss everything to coat. Finish by scattering the crumbled feta over the top and serve with lime wedges on the side, if you like.
