This is a speedy Japanese-style meal, ready in about 25 minutes. Chicken breast strips are marinated in a vibrant sauce made from fresh coriander, red chillies, peanuts, lime juice, and mirin. The chicken is then cooked and served over blanched udon noodles and thinly sliced green beans, all tossed with the remaining fresh sauce. It yields four generous servings.

Spicy Coriander Chicken With Udon Noodles

Ingredients

  • 3 cups coriander
  • 2 long red chilies
  • 70 g unsalted peanuts
  • 125 ml lime juice
  • 2 tablespoons vegetable oil
  • 2 tablespoons mirin
  • 1 tablespoon caster sugar
  • 600 g chicken breasts, cut into strips
  • 880 g udon noodles, blanched
  • 200 g green beans, thinly sliced and blanched

Method

  1. Combine the coriander, red chillies, peanuts, lime juice, vegetable oil, mirin and caster sugar in a food processor and pulse to a rough chop.
  2. Transfer half of this blended mixture into a separate bowl, add the chicken strips and toss until evenly coated.
  3. Cook the coated chicken in a large frying pan until it is thoroughly cooked.
  4. In a serving bowl, mix together the blanched udon noodles, blanched green beans and the remaining sauce.
  5. Serve the noodles and beans topped with the cooked chicken.
