Spicy Cold Soba Noodles

These chilled soba noodles are dressed in a rich, savoury sauce made from reduced soy sauce, sesame tahini, and a kick of chilli oil. The noodles are boiled until just tender, then rinsed in cold water before being combined with the dressing and chilled. This dish serves eight and can be enjoyed as a side or a light main course with added protein. The total preparation and chilling time is around 60 minutes.

Spicy Cold Soba Noodles

Ingredients

  • 0.66666668653488 cup soy sauce
  • 2 tablespoons molasses
  • 0.5 cup sesame oil
  • 0.5 cup sesame tahini
  • 6 tablespoons balsamic vinegar
  • 2 tablespoons chili oil, or more to taste
  • 0.5 cup sliced scallions, divided
  • 1 pound dried soba noodles
  • 1 tablespoon sesame seeds

Method

  1. Place the soy sauce in a small saucepan and bring it to a boil. Lower the heat and let it simmer until its volume is reduced by half, which should take 10 to 15 minutes. Remove from the heat and mix in the molasses.
  2. In a separate bowl, combine the sesame oil, tahini, balsamic vinegar, and chilli oil by whisking. Gradually whisk the reduced soy sauce mixture into this until incorporated. Add 1/4 cup of the sliced scallions and stir.
  3. Fill a large pot with lightly salted water and bring it to a rolling boil. Add the dried soba noodles and cook for about 3 minutes, stirring now and then, until they are tender but still have a bite. Drain the noodles at once and rinse them well under cold running water.
  4. Combine the rinsed noodles with the prepared sauce, tossing to coat evenly. Scatter the remaining 1/4 cup of scallions and the sesame seeds over the top. Place the dish in the refrigerator to chill for a minimum of 30 minutes.
