Spicy Cold Celery

Ingredients

  • 1 lb celery rib, trimmed
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 3 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 2 teaspoons vinegar (preferably rice or cider)
  • 1 garlic clove, peeled and minced
  • 1 teaspoon chili oil (optional)

Method

  1. Slice the celery ribs into pieces roughly 2 inches long. Combine these with the salt and sugar, then leave them to sit for 10 minutes. Meanwhile, whisk the sesame oil, soy sauce, sugar, vinegar, minced garlic, and optional chilli oil together in a separate bowl.
  2. Thoroughly rinse the celery, drain it well, and pat it dry with a kitchen towel. Combine the celery with the prepared dressing. Place the mixture in the refrigerator to marinate for a minimum of three hours, or for up to a full day.
  3. Serve the dish straight from the refrigerator while it is still nicely chilled.
