Spicy Cod With Tomatoes and Spinach
This is a wholesome and tasty one-pan creation, perfect for a quick family dinner. Chunks of cod are simmered in a rich, spiced sauce made with tomatoes, green chilies, and spinach. The dish comes together in just half an hour. For a complete meal, serve it over your favourite pasta to soak up all the delicious sauce.
Ingredients
- 1 lb cod
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 (14 1/2 ounce) can chopped tomatoes
- 2 (10 ounce) cans chopped tomatoes and green chilies
- 1/2 onion, chopped
- 2 shallots, chopped
- 3 cloves garlic, chopped
- 3 tablespoons tomato paste
- 1 teaspoon cumin
- 1 -2 teaspoon olive oil
Method
- Warm the olive oil in a large pan.
- Place the onions, shallots, and garlic into the pan.
- Continue cooking until the onion turns translucent.
- Introduce all the tomatoes, the tomato paste, and the cumin to the pan.
- Mix well and allow the sauce to simmer for 3-5 minutes until it begins to thicken a little.
- Stir in the spinach until it is fully incorporated.
- Cook the mixture for a further 2-3 minutes.
- While the sauce cooks, cut the cod into small, uniform pieces.
- Add the fish to the tomato sauce, stirring to coat each piece completely.
- Simmer for 5-8 minutes until the cod is opaque and flakes apart easily with a fork.
