Spicy Cod With Tomatoes and Spinach

Ingredients

  • 1 lb cod
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 1 (14 1/2 ounce) can chopped tomatoes
  • 2 (10 ounce) cans chopped tomatoes and green chilies
  • 1/2 onion, chopped
  • 2 shallots, chopped
  • 3 cloves garlic, chopped
  • 3 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 -2 teaspoon olive oil

Method

  1. Warm the olive oil in a large pan.
  2. Place the onions, shallots, and garlic into the pan.
  3. Continue cooking until the onion turns translucent.
  4. Introduce all the tomatoes, the tomato paste, and the cumin to the pan.
  5. Mix well and allow the sauce to simmer for 3-5 minutes until it begins to thicken a little.
  6. Stir in the spinach until it is fully incorporated.
  7. Cook the mixture for a further 2-3 minutes.
  8. While the sauce cooks, cut the cod into small, uniform pieces.
  9. Add the fish to the tomato sauce, stirring to coat each piece completely.
  10. Simmer for 5-8 minutes until the cod is opaque and flakes apart easily with a fork.
