Spicy Citrus Pork Roast (Crock Pot)
This dish offers a unique take on pork, blending citrus and spice for a rich flavour. Ingredients
- 4 slices bacon, chopped
- 3 lbs boneless pork shoulder, trimmed of excess fat
- 2 medium onions, thinly sliced
- 3 garlic cloves, minced
- 1 jalapeno pepper, finely chopped
- 1 1/2 tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon cracked black peppercorns (or coarsely ground pepper)
- 1/4 cup flour
- 1 tablespoon orange zest
- 1 1/2 cups orange juice
- 2 bananas, peeled and thinly sliced
Method
- Fry the chopped bacon in a skillet until crisp. Take out the bacon, leaving the fat behind.
- Brown the pork shoulder on every side in the same skillet, then move it to your slow cooker.
- Drain the skillet, keeping just 1 tablespoon of bacon fat. Cook the sliced onions until they begin to soften.
- Mix in the minced garlic, chopped jalapeno, chilli powder, salt, and pepper. Cook for 1 minute.
- Sprinkle the flour into the pan and continue to cook and stir for another minute.
- Pour in the orange juice and zest, and add the banana slices. Stir to deglaze the pan, mashing the bananas into the sauce as you go.
- Add the reserved bacon pieces to the skillet mixture, then pour everything over the pork in the slow cooker.
- Put the lid on and cook on low for 8 hours. The recipe notes it can be cooked on high for 4-5 hours, but caution is advised due to the fruit sugar.
