Spicy Citrus Pork Roast (Crock Pot)

Ingredients

  • 4 slices bacon, chopped
  • 3 lbs boneless pork shoulder, trimmed of excess fat
  • 2 medium onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 jalapeno pepper, finely chopped
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon cracked black peppercorns (or coarsely ground pepper)
  • 1/4 cup flour
  • 1 tablespoon orange zest
  • 1 1/2 cups orange juice
  • 2 bananas, peeled and thinly sliced

Method

  1. Fry the chopped bacon in a skillet until crisp. Take out the bacon, leaving the fat behind.
  2. Brown the pork shoulder on every side in the same skillet, then move it to your slow cooker.
  3. Drain the skillet, keeping just 1 tablespoon of bacon fat. Cook the sliced onions until they begin to soften.
  4. Mix in the minced garlic, chopped jalapeno, chilli powder, salt, and pepper. Cook for 1 minute.
  5. Sprinkle the flour into the pan and continue to cook and stir for another minute.
  6. Pour in the orange juice and zest, and add the banana slices. Stir to deglaze the pan, mashing the bananas into the sauce as you go.
  7. Add the reserved bacon pieces to the skillet mixture, then pour everything over the pork in the slow cooker.
  8. Put the lid on and cook on low for 8 hours. The recipe notes it can be cooked on high for 4-5 hours, but caution is advised due to the fruit sugar.
