Spicy Citrus Grilled Chicken
This dish features bone-in chicken pieces marinated in a vibrant and spicy citrus blend. The marinade combines fresh lime and orange juice with their zest, olive oil, oregano, garlic and minced jalapeno for a kick. After marinating for at least 90 minutes, the chicken is seasoned and grilled until perfectly cooked and browned. It's an ideal choice for a quick yet impressive main course.
Ingredients
- 1 1/2-2 lbs bone-in chicken pieces (your favorite, cut breasts in half crosswise)
- 1 lime, juice and zest of, large
- 1 orange, juice and zest of, large
- 1/4 cup olive oil
- 1/2 teaspoon dried oregano
- 2 large garlic cloves, minced
- 1 small jalapeno pepper, seeded, minced (for spicier chicken, leave seeds and ribs)
- salt & freshly ground black pepper
Method
- Put the chicken pieces into a large resealable plastic bag.
- Combine the lime juice and zest, orange juice and zest, olive oil, oregano, minced garlic and minced jalapeno in a bowl, whisking them together.
- Transfer the marinade into the bag with the chicken, seal it and place it flat in a shallow dish. Refrigerate for a minimum of 90 minutes or for up to 4 hours, turning the bag now and then.
- Take the chicken out of the marinade and sprinkle it generously with salt and freshly ground black pepper.
- Cook the chicken on the grill until the exterior is nicely browned and the internal temperature is 165 degrees F.
