Spicy Citrus Chicken Cubes
This vibrant one dish meal features chicken breast cubes coated in citrus grill spice and pan fried. They are then simmered in a tangy sauce made from hot sauce, water, and dry ranch dressing mix, with fresh orange juice added for a fruity note. Ingredients
- 2 lbs chicken breasts
- 3 tablespoons citrus zest (use citrus grill spice, RZ wouldn't let me put that in)
- 1/4 cup olive oil
- 3/4 cup Frank's red hot sauce
- 3/4 cup water
- 1 1/2 tablespoons hiden valley ranch dressing mix (dry powder mix)
- 1 orange, juice of
- salt & pepper
Method
- Cube the 2 lbs of chicken breast.
- Combine the 3 tablespoons of citrus grill spice with salt and pepper, then toss the chicken cubes in this mixture.
- Heat the 1/4 cup of olive oil in a saute pan and cook the chicken until browned on all sides.
- Whisk together the 3/4 cup hot sauce, 3/4 cup water, and 1.5 Tbsp ranch mix, then pour this into the pan with the chicken.
- Lower the heat and allow the dish to simmer for 8-10 minutes until the chicken is cooked through and the sauce has thickened.
- Stir in the juice from one orange during the simmering time. adding it later will impart a stronger fruity flavour.
