Spicy Citrus Chicken Cubes

Ingredients

  • 2 lbs chicken breasts
  • 3 tablespoons citrus zest (use citrus grill spice, RZ wouldn't let me put that in)
  • 1/4 cup olive oil
  • 3/4 cup Frank's red hot sauce
  • 3/4 cup water
  • 1 1/2 tablespoons hiden valley ranch dressing mix (dry powder mix)
  • 1 orange, juice of
  • salt & pepper

Method

  1. Cube the 2 lbs of chicken breast.
  2. Combine the 3 tablespoons of citrus grill spice with salt and pepper, then toss the chicken cubes in this mixture.
  3. Heat the 1/4 cup of olive oil in a saute pan and cook the chicken until browned on all sides.
  4. Whisk together the 3/4 cup hot sauce, 3/4 cup water, and 1.5 Tbsp ranch mix, then pour this into the pan with the chicken.
  5. Lower the heat and allow the dish to simmer for 8-10 minutes until the chicken is cooked through and the sauce has thickened.
  6. Stir in the juice from one orange during the simmering time. adding it later will impart a stronger fruity flavour.
