Spicy Cilantro Peanut Chicken

Ingredients

  • 3 lbs chicken breasts
  • 1 cup vegetable oil
  • 3/4 cup soy sauce
  • 3/4 cup white vinegar
  • 1 tablespoon sesame oil
  • 2/3 cup creamy peanut butter
  • 3/4 cup sugar
  • 1 1/2 teaspoons cayenne pepper
  • 1 bunch green onion, Minced
  • 1/2 cup cilantro, Minced
  • 4 cups cooked white rice

Method

  1. Put the chicken breasts into boiling water, then reduce the temperature and let them simmer for 20 minutes. Once cooked, slice the chicken into cubes measuring 1/2 inch.
  2. Mix every remaining ingredient, leaving out the rice, in a medium saucepan. Heat the mixture until it boils, stirring often. Take the pan off the heat as soon as it reaches a boil.
  3. For serving, arrange the cubed chicken on top of the cooked rice. Drizzle the prepared sauce generously over the chicken and rice.
