Spicy Chorizo Minestrone
This robust minestrone is enriched with spicy chorizo sausage and a medley of vegetables. It features a base of onion, garlic, chilli, carrot, and celery simmered in chicken stock with diced tomatoes. Small pasta shapes, cannellini beans, and peas are added for a satisfying finish, served with a sprinkle of parmesan and fresh bread. The dish is ready in about 45 minutes and serves six people.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 garlic cloves, chopped
- 1 small red chile, finely chopped
- 2 chorizo sausages, peeled chopped
- 1 large carrot, peeled, diced
- 2 stalks celery, diced
- 1 (400 g) can diced tomatoes
- 6 cups chicken stock
- 1 1/4 cups small dried pasta shapes
- 1/2 cup frozen peas, run under hot water, drained
- 1 (400 g) can cannellini beans, rinsed, drained
- 1/4 cup flat leaf parsley, chopped
- salt and pepper
- grated parmesan cheese, and crusty bread to serve
Method
- Warm the olive oil in a large saucepan. Cook the diced onion, chopped garlic, finely chopped chilli, and chopped chorizo, stirring frequently, for 3 minutes.
- Put in the diced carrot and celery, cooking and stirring for 2 minutes. Mix in the canned diced tomatoes and the chicken stock.
- Bring the mixture to a boil before adding the dried pasta. Let it simmer without a lid for 10-15 minutes, until the pasta is just tender.
- Add the thawed peas, rinsed cannellini beans, and chopped parsley. Allow it to simmer for 5 minutes. Season with salt and pepper to your taste.
- Spoon the soup into warmed bowls. Finish with a sprinkle of grated parmesan cheese and serve alongside crusty bread.
