This robust minestrone is enriched with spicy chorizo sausage and a medley of vegetables. Spicy Chorizo Minestrone

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 garlic cloves, chopped
  • 1 small red chile, finely chopped
  • 2 chorizo sausages, peeled chopped
  • 1 large carrot, peeled, diced
  • 2 stalks celery, diced
  • 1 (400 g) can diced tomatoes
  • 6 cups chicken stock
  • 1 1/4 cups small dried pasta shapes
  • 1/2 cup frozen peas, run under hot water, drained
  • 1 (400 g) can cannellini beans, rinsed, drained
  • 1/4 cup flat leaf parsley, chopped
  • salt and pepper
  • grated parmesan cheese, and crusty bread to serve

Method

  1. Warm the olive oil in a large saucepan. Cook the diced onion, chopped garlic, finely chopped chilli, and chopped chorizo, stirring frequently, for 3 minutes.
  2. Put in the diced carrot and celery, cooking and stirring for 2 minutes. Mix in the canned diced tomatoes and the chicken stock.
  3. Bring the mixture to a boil before adding the dried pasta. Let it simmer without a lid for 10-15 minutes, until the pasta is just tender.
  4. Add the thawed peas, rinsed cannellini beans, and chopped parsley. Allow it to simmer for 5 minutes. Season with salt and pepper to your taste.
  5. Spoon the soup into warmed bowls. Finish with a sprinkle of grated parmesan cheese and serve alongside crusty bread.
