Spicy Chorizo Breakfast Burritos
These hearty breakfast burritos are packed with flavour from crumbled chorizo sausage, sautéed onions, bell peppers, and jalapeño. Ingredients
- 0.5 pound chorizo sausage

- 0.5 cup chopped onion
- 0.5 cup chopped bell pepper
- 0.25 cup chopped jalapeno pepper
- 6 large eggs
- 3 tablespoons milk
- 1 teaspoon salt
- 6 (7 inch) flour tortillas, warmed
- 1 cup shredded Cheddar cheese
Method
- Place a large skillet on the heat. Cook the chorizo sausage, breaking it up as it cooks, until it is browned and crumbled, which will take 5 to 7 minutes. Drain off any excess fat.
- As the chorizo cooks, prepare another large skillet with cooking spray and set it over the heat. Cook the chopped onion, bell pepper, and jalapeno pepper, stirring now and then, until they begin to brown lightly, about 5 to 7 minutes.
- In a large bowl, whisk together the eggs, milk, and salt. Pour this mixture into the skillet containing the vegetables and cook until the eggs are fully set, approximately 5 minutes. Stir in the cooked chorizo and take the skillet off the heat.
- Place the warmed flour tortillas on a flat surface. Spoon the chorizo and egg filling into the centre of each one, top with the shredded Cheddar cheese, and fold to form a burrito.
