Spicy Chopped Salad
This vibrant American side dish comes together in a flash. It features a robust mix of chopped giardiniera, crisp romaine hearts, savoury pepperoni, and olives, all tossed with a simple yet flavourful pesto and red wine vinegar dressing. Perfect for a speedy accompaniment, it serves four people and requires only about 10 minutes of preparation time.
Ingredients
- 250g giardiniera Italian hot pickled vegetable salad (pepperoncini, cauliflower, carrots and celery) drained, available on Italian foods aisle, chopped
- 2 romaine hearts, chopped
- 50g pitted good quality olives, any variety
- 150g pepperoni or stick salami, diced
- A handful flat-leaf parsley, chopped
- 2 tbsp red wine vinegar, eyeball it
- 4 tbsp prepared pesto
- 60ml extra-virgin olive oil, eyeball it
- Salt and pepper
Method
- Place all the prepared salad ingredients into a large mixing bowl. Add the red wine vinegar and extra-virgin olive oil, then season with salt and pepper according to your preference.
- Take a separate small bowl and combine the 4 tbsp of prepared pesto with a splash of red wine vinegar. While mixing, gradually stream in the extra-virgin olive oil until the dressing emulsifies and thickens slightly.
- Pour the finished pesto dressing over the assembled salad, ensuring it is evenly distributed before serving.
