Spicy Chipotle Grilled Shrimp
These grilled shrimp skewers deliver a powerful kick, marinated in a bold blend of chipotle chillies, garlic and a mix of piquant spices. The shrimp are threaded onto skewers and cooked quickly on a hot grill, resulting in a smoky, spicy main course perfect for a summer dinner. Ingredients
- 3 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, chopped
- 1 lemon, juiced
- 1 tablespoon olive oil
- 1 tablespoon paprika
- 1 teaspoon chopped fresh cilantro
- 1 teaspoon kosher salt
- 0.5 teaspoon cracked black pepper
- 0.5 teaspoon crushed red pepper flakes
- 0.25 teaspoon cayenne pepper
- 2 pounds uncooked medium shrimp, peeled and deveined

Method
- Combine the minced garlic, chopped chipotle peppers, lemon juice, olive oil, paprika, cilantro, kosher salt, black pepper, red pepper flakes and cayenne pepper in a mixing bowl. Add the shrimp and toss until they are fully coated. Refrigerate the mixture to marinate for 30 minutes.
- Prepare your outdoor grill by preheating it for medium-high heat. Lightly oil the cooking grate.
- Take the shrimp from the marinade, discarding any leftover liquid. Thread approximately 5 shrimp onto each skewer. Grill them on the preheated grill for about 2 minutes per side, until they are pink and opaque throughout.
