Spicy Chipotle-Lime Salsa

This salsa offers a smoky flavour that builds to a spicy finish without overwhelming heat. Inspired by Mexican and Ecuadorian 'Aji' styles, it combines chipotle chillies, fresh lime, and aromatic spices. The recipe requires just 15 minutes of active preparation, though the flavours deepen after resting. It yields approximately 2 cups of a versatile, sauce-like condiment.

Spicy Chipotle-Lime Salsa

Ingredients

  • 1 cup diced tomato, Drained
  • 10 ounces chipotle chiles in adobo (I make my own, but you can usually find them canned, in the Intl isle of the supermarket.)
  • 1 lime, juice of
  • 2 fresh red chili peppers, stemmed
  • 3 garlic cloves, peeled
  • 1/4 cup onion, Diced
  • 1/4 cup crushed red pepper flakes
  • 1/8 cup chopped fresh cilantro
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons ground black pepper
  • 2 teaspoons ground cumin
  • 10 -12 dashes TABASCO® brand Chipotle Pepper Sauce

Method

  1. Place the lime juice, fresh red chillies, peeled garlic cloves, diced onion, and chopped fresh cilantro into a food processor or blender and process until a uniform consistency is achieved.
  2. Introduce the drained diced tomato and the chipotle chillies in adobo to the processor and blend again until the contents are smooth.
  3. Add the garlic powder, onion powder, crushed red pepper flakes, ground black pepper, ground cumin, and the 10-12 dashes of TABASCO® brand Chipotle Pepper Sauce.
  4. Blend the entire mixture once more until it reaches a smooth, even texture.
  5. Allow the salsa to rest for 3-6 hours, or ideally overnight, to let the flavours fully combine.
