Spicy Chinese Potato Salad
This is a unique potato salad that omits traditional mayonnaise. Instead, it features a piquant dressing made with peanut oil, rice vinegar, soy sauce, and sesame oil, spiked with garlic and cayenne. Cubed potatoes are cooked until just tender, then tossed with colourful bell peppers, green onions, and fresh parsley in the zesty dressing. The result is a lighter, flavour-packed side dish perfect for serving chilled.
Ingredients
- 1/4 cup peanut oil
- 4 teaspoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2-1 teaspoon fresh garlic, fine mince
- 1/4 teaspoon cayenne pepper
- 1/8-1/4 teaspoon white pepper
- 4 medium potatoes, peeled and cut into 1-inch pieces
- 1/2 red bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 2 tablespoons fresh parsley, chopped
- 1/2 cup green onion, thin slice
Method
- Place the first seven ingredients into a blender and blend them together.
- Boil the peeled and cubed potatoes until they are just tender when pierced with a fork.
- Drain the cooked potatoes thoroughly and transfer them to a large mixing bowl with the chopped peppers, green onion, and parsley.
- Pour the blended dressing over the potato mixture and toss everything together carefully.
- Season the salad with salt according to your preference.
- Cover the bowl and place the salad in the refrigerator to chill before serving.
