Ingredients
- 1 pound cooked tiger shrimp, thawed and tails removed
- 3 tablespoons soy sauce
- 1 tablespoon vegetable oil, or to taste
- 1 medium onion, diced
- 2 jalapeno peppers, diced
- 3 cloves garlic, diced
- 1 (1/2 inch) piece ginger, grated
- 1 lime, halved
- 0.5 cup all-purpose flour
- 1 teaspoon baking powder
- salt to taste
- 0.33333334326744 cup milk, or as needed
- 0.5 cup vegetable oil for frying
Method
- Combine the shrimp and soy sauce in a bowl, toss to coat, and set them aside.
- Warm 1 tablespoon of oil in a large skillet. Cook the diced onion until it is soft and translucent, about 5 minutes. Stir in the jalapeno peppers, garlic, and grated ginger. Squeeze in the juice from half the lime and mix everything together for about 2 minutes. Take the skillet off the heat.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually pour in the milk until you achieve a thin, runny batter.
- Heat 1/2 cup of oil in a frying pan. Lightly coat each shrimp in the batter and fry them in batches until golden, about 1 minute per side. Combine the fried shrimp with the prepared jalapeno mixture. Finish by squeezing the juice from the remaining lime half over the top.
