This vibrant Indian chickpea curry is a speedy vegetarian dish packed with flavour. Spicy Chickpea Curry

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 garlic cloves, chopped
  • 2 1/2 cm ginger, fresh, grated
  • 2 green chilies, fresh, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 3 tomatoes, chopped
  • 1 tablespoon tamarind paste
  • 300 g frozen chopped spinach
  • 400 g canned chick-peas, drained
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika

Method

  1. Warm the vegetable oil in a large saucepan. Cook the sliced onion and chopped garlic, stirring, for five minutes.
  2. Mix in the grated ginger, chopped green chillies, ground cumin, ground coriander, and garam masala. Continue to cook for a further two minutes.
  3. Add the chopped tomatoes, tamarind paste, and frozen chopped spinach to the pan. Turn up the heat and cook until the spinach is thawed and any liquid is absorbed, which should take about five minutes.
  4. Stir through the drained chickpeas, salt, and paprika. Cook everything together for three minutes before serving.
