Spicy Chicken With Olives
This one dish meal features chicken pieces browned and then simmered with a robust combination of olives, capers, tomatoes, and garlic in white wine. The dish is finished with fresh parsley for a vibrant, Mediterranean-inspired flavour. Ingredients
- 4 chicken thighs, with skin and bones
- 2 chicken breasts, with skin and bones halved crosswise
- salt and pepper
- 3 tablespoons chili oil, recipe follows
- 1 tablespoon minced garlic
- 1/2 cup kalamata olive, pitted and coarsely chopped
- 1/2 cup green olives, pitted and coarsely chopped
- 1 cup tomatoes, halved
- 4 tablespoons chopped Italian parsley
- 1 1/2 tablespoons drained capers
- 2/3 cup dry white wine or 2/3 cup vegetable stock
Method
- Season the chicken pieces with salt and pepper. In a large, heavy frying pan, heat the chili oil and brown the chicken until golden, which should take about 5 minutes.
- Take the pan off the heat. Mix in the minced garlic, both types of chopped olives, 3 tablespoons of the parsley, and the capers. Pour in the white wine or vegetable stock.
- Return the pan to the heat and bring the liquid to a boil. Once boiling, lower the heat, cover the pan, and let it simmer. Cook the chicken until it is done, turning the pieces now and then, for about 10 minutes.
- Move the cooked chicken to a serving platter. Pour the sauce from the pan over the chicken. Scatter the rest of the chopped parsley on top before serving.
- For the chili oil, pour 2 cups of olive oil into a small, heavy saucepan and add 4 teaspoons of red pepper flakes.
- Heat the mixture over a low temperature until it reaches 180 degrees F, which takes roughly 5 minutes.
- Take the saucepan off the heat and allow the oil to cool completely to room temperature. this will take about 2 hours. Pour the oil and flakes into a 4 ounce bottle, seal it, and store in the refrigerator for up to 1 month.
